The use of cast iron and cooking dates back 2500 years. Cast iron is a near-perfect heat conductor, heating evenly and consistently. In fact, it can withstand very high temperatures making it perfect for searing. When properly maintained, it can also provide an excellent non-stick cooking surface. Using Napoleon cast iron cooking grids offer many exceptional cooking benefits. You may have heard that you must season cast iron. To season your new cast iron grids, first clean it with warm soapy water to remove any dust, rinse thoroughly and dry. Next apply a layer of fat all over. The best to use are high in saturated fats such as Crisco, palm oil, coconut oil or lard. Finally heat up the fat covered grills to a high temperature which will cause the fat to bond to the cast iron. It is recommended that you re-season your grids every fourth or fifth grill session to help maintain your grids.
After the first step, you can skip the soap and simply reapply your high fat solid. In the event you notice any surface corrosion appearing on your Napoleon cast iron cooking plates, you can make your grids look like new with a little steel wool and some soapy water. First clean the cast iron grill with warm, soapy water; rinse thoroughly and scrub vigorously with a cleaning pad. Next, reapply a layer of fat all over. Lastly, heat up the fat covered grills to a high temperature causing the fat to bond to the iron. Enjoy and happy grilling!
